Amazing Eggs and Tomatoes

How can you say no to this dish?! Look how PRETTY it is! Fresh eggs and fresh tomatoes just GO together yea? Of course, it's also a dish from Falastin (check out this post for the other recipe I tried). I saw it and HAD to make it, and I'm so glad that I did. Of course, I tweaked it to make it mine. It looks complicated but trust me, this is so easy to make (all of the recipes on this blog are easy...there's no other way to cook during the week!). The FLAVOR...man, just give it a whirl, you'll see!

Amazing Eggs and Tomatoes


Ingredients

  • 8 eggs, hard or soft boiled

  • 1 pint of cherry tomatoes, halved

  • 1 large clove of garlic, diced

  • 1/2 large lemon, squeezed

  • 1 Tbsp. Za'atar

  • Chives & parsley, torn

  • EVOO

  • Sea salt and pepper


Directions

  1. Hard boil 8 eggs (2 per person), shell and cut in half. Place them on a plate, yolk side up.

  2. While the eggs are boiling, halve the tomatoes in a pan with EVOO and the garlic. Let them cook down until soft. Add them on top of the eggs after they've been plated.

  3. Drizzle EVOO over the top, sprinkle the Za'atar over the eggs and squeeze the lemon over as well.

  4. Top with chopped chives, torn parsley along with salt and pepper if desired.



PS - We also had corn on the cob with this! That's bulgar with sautéed swiss chard and cooked white beans.
