Crunchy Asian Mango Salad

I love going through cooking magazines and ripping out recipes that I want to try. What I love even more is ripping out recipes that look delicious but that I would want to change a bit to make it even tastier for me!


This salad is an example of that. I kept meaning to make it but there were a couple of things about the recipe that I didn't like...like the honey or the 3 different types of cabbage (3?!) or the fact that I could not remember to buy fresh ginger to save my life, but had powdered at home already. PS - Powdered ginger, while not as fresh and flavorful is still a great substitute...yum!


I finally decided on a Saturday morning to make it my way and it didn't disappoint.

Instead of 3 different types of cabbage, I chose red cabbage b/c my kids would eat it.

Instead of fresh ginger I used powdered.

I added carrots.

I added sesame seeds.

I left the honey out! Not everything needs a replacement ;) I made it in the morning and we ate it with lunch. Good thing I have more of all the ingredients because it was gone in minutes! You could add white beans and/or hard boiled eggs to this and it would be delicious too!



Crunchy Asian Mango Salad


Ingredients (Serves 4)


  • 1 cup of thinly shredded red cabbage

  • 1 large carrot, peeled into strips

  • 2 green scallions, chopped

  • 1/2 cup ripe mango, diced

  • 1/2 avocado, diced

  • 1 handful of cilantro, torn

  • 1 palmful of sesame seeds

  • 2 Tbsp sesame oil

  • 3 Tbsp soy sauce (or aminos)

  • 1 Tsp powered ginger or 1-inch knob of fresh ginger, peeled and diced small.


Directions

  1. Prepare the cabbage, carrot, scallions, mango, avocado and cilantro. Add them to a large bowl. Add the sesame seeds.

  2. In a small bowl, mix the sesame oil, soy sauce and ginger.

  3. Add the dressing to the veggies and give it a toss!

This would be great alongside brown rice, eggs, shrimp or chicken! If I had leftovers, I would add a hard boiled egg with some brown rice - so good, filling and easy! Have you tried this? How did you make it yours?! Tell us in the FB group!
