Fall Sweet Potato & Grain Harvest Bowl

It was the most beautiful fall day. The leaves were at their peak, the sun was shining, it was 65 degrees and everyone was out walking. It called for the perfect fall dinner and I had something in mind and was eager to get going on it.

You can prep 90% of this meal in advance, but even without prepping it doesn't take more than 30 mins. Feel free to add meat if you need more protein, but it doesn't really need it!
Fall Sweet Potato & Grain Harvest Bowl
Ingredients
1 cup of Farro
1/2 cup of Brown or Wild Rice
1/2 cup of Puy Lentils (or regular lentils!)
1 large Sweet Potato, cubed
1/2 head of Cauliflower, chopped
1 cup of frozen Corn
1 14oz can of White Beans (any kind that you like)
Extra Virgin Olive Oil (EVOO)
Small palm full of fresh Rosemary, chopped
Small palm full of fresh Thyme
Salt/Pepper to taste
Directions
Bring a large pot of water to a boil (feel free to use broth of any kind to add flavor). Preheat the oven to 400 Roast.
Add the farro, rice & lentils to the boiling water. Stir occasionally until all are cooked, about 20 mins.
While the grains are cooking, cube/chop the sweet potato and cauliflower and add them to a baking sheet, coated in the olive oil.
Add the herbs and pepper to the vegetables and roast them in the oven for about 12-15 minutes.
Drain the beans and rinse them off. Let them drain again until step 7.
Microwave the corn.
Mix the grains/lentils, roasted veggies, corn and beans in a large bowl. Top with more olive oil and herbs if needed.
