Garlicky Cauliflower Rice

I will start by saying that I've never been a fan of riced cauliflower. I've bought the frozen bag from Trader Joes and...it just doesn't do much for me. There's no taste, the bag is too small and...I don't like to cook food that doesn't light me up. BUT I know that so many of you DO love it! So I created my own Garlicky Riced Cauliflower and now I'm a riced cauliflower lover. Before we get into the recipe, I just want to note that riced cauliflower does not act as a stand-in for a grain. You still need to include your grain in order to get the protein and other nutrients that cauliflower doesn't have. But it makes a great veggie to your meal! Sure this might take a few more minutes then the frozen bag, but you'll get SO much more food out of it and it will actually have taste!! This is a great recipe to make a big batch of and then store it for using during the week.

Garlicky Cauliflower Rice
Ingredients
1 head of cauliflower, roughly chopped
2-3 medium garlic cloves
4 Tbsp EVOO (Extra Virgin Olive Oil)
1/4 cup water
Salt, pepper, red pepper flakes to taste
Directions
Cut your cauliflower apart into the heads & roughly chop. Working in batches put a small amount into the blender and blend until it's in rice sized pieces. Remove the cauliflower and place in a large pan. Keep running small batches until the whole head is rice sized.
Place all the cauliflower into a large pan. Add the garlic, EVOO (olive oil) and water. Turn the heat on medium and sauté for 2-3 minutes.
Remove from pan, and use as you wish! I love topping mine with pepper and red pepper flakes.
