Grapefruit and Avocado Salad

I know this looks and sounds like a summer salad, but early winter is the best time for citrus here in NY. Grapefruit is grown year-round in California, Arizona and Florida, so it's always available to us. However, grapefruit is the tastiest from November through December - so be sure to grab one next time you're shopping. Also...it's packed with Vitamin C and since there are many sicknesses going around right now, I think we can all benefit from a little extra Vitamin C!
Mmmmmm! – All of us
This salad is a bite of freshness when it's grey and cold outside. It's a nice change from traditional winter meals, and makes a perfect side to pretty much any dish.
Grapefruit and Avocado Salad
Ingredients serves 4
4 large handfuls of mixed greens
1/2 grapefruit, sliced into bite-size pieces
1 avocado, cut into chunks
1 handful of almonds, chopped
1/4 cup of sprouts
2 Tbsp coconut shreds (optional)
1/4 cup olive oil
2 Tbsp balsamic vinegar
Pepper to taste
Directions
Add the greens to a large bowl.
Prepare & add ingredients through coconut shreds to the bowl.
To make the dressing combine the oil & vinegar with a pinch of pepper.
Add the dressing to the bowl & mix it up!
*Adding green olives (not jarred olives, but from the olive bar) are a great addition to this salad!
This season, be sure to include fruits and vegetables that are packed with Vitamin C to support your immune system.
