Jalepeno Corn Chowder


I love corn chowder and I haven't had it in years! I decided to find a dairy-free recipe so that we could all eat it. I ended up taking a few recipes, combining them and then adding my own twist to it. It turned out great and we'll definitely make it again.

The best part? I made it in the crockpot...so even though I was out all afternoon, we still had a healthy meal for dinner. And no prep at dinner time. Prefect if you ask me!

I literally took all of the ingredients, dumped them into the crockpot, gave it a stir and walked away. We all have 5 minutes to do that, even if you're tired. Jalapeño Corn Chowder


Ingredients

  • 2 16oz bags of frozen corn

  • 1 29oz can of white beans, drained, rinsed and drained (any kind is fine)

  • 1 onion, chopped

  • 3 cloves of garlic, diced

  • 2 medium carrots, chopped

  • 1 red bell pepper, chopped

  • 1 jalapeño pepper, diced or sliced (leave the seeds in for extra heat!)

  • 2 large potatoes, chopped

  • 1 8oz package of Baby Bella mushrooms, sliced (optional)

  • 4 cups veggie or chicken broth

  • Extra Virgin Olive Oil

  • 1-2 pinches of red chili pepper flakes (optional)

  • 2 Bay leaves


Directions

  1. Turn the crockpot on High.

  2. Prepare and put all of the ingredients into the crockpot. Give it a stir.

  3. Go about your day and come home to a delicious meal waiting for you!

  4. ***OPTIONAL*** - If you have an immersion blender, blend the chowder for a minute, still leaving veggie chunks. Be sure to take out the bay leaves first!

I made this with a side of barley and rice because that's what I had sitting in my fridge. You can make any whole grain with this to finish off the meal! In these photos, the grains are mixed right in. Yum!
