Warm & Hearty Lentil Soup

One of my favorite things about the fall is that it changes the recipes I make and the way I cook. It's a re-set and re-fresh for dinners and I look forward to it every year (although I do miss fresh veggies!).

When I asked my sister what she wanted me to make for our get together dinner, she said "Make something hearty & delicious...I'm hungry!". Right away my husband and I said, "Lentil Soup!". I don't think it disappointed...there were lots of empty bowls and full bellies! This soup is so tasty and keeps me full until breakfast, no joke. And can I just TELL you how EASY it is to make? I almost feel guilty at how good it is! To make this even easier, throw all the ingredients into a crockpot, go about your day and then serve it up for dinner. The extras are even better for leftovers or pop them into the freezer for another cold day!
Warm & Hearty Lentil Soup
Ingredients
1/2 bag of brown lentils (I love Goya)
2 garlic cloves, crushed or diced
3 Tbsp EVOO
1 small onion, sliced
1 medium carrot, sliced
2 celery ribs, sliced
4 red potatoes, chopped into bite size pieces
8 cups of chicken broth
2 Tbsp dried oregano
2 Tbsp dried parsley
1 Tbsp dried thyme
2 Bay leaves
Directions
Grab a large pot and coat the bottom with EVOO.
Prepare your garlic, onions, carrots, celery and potatoes and put them into the pot with the dried herbs, on medium heat. Stir occasionally for about 5-7 minutes.
Add the broth & lentils, give it a stir and let it go on medium heat for about 25 minutes.
Dish it up, add fresh parsley if you would like and enjoy!

See how easy?! You could top this with Feta cheese or add chicken...but it really doesn't need it! I do serve this with rice because I love rice in my soup, but again...optional!
