Mediterranean Wild Rice Bowl

I'm excited to share this recipe because it's a staple at our home. We have it almost weekly because it's not only healthy but it's SO easy to make, it's delicious and everyone eats it (phew!). I usually make this with pasta but I've been dying for wild rice. I think I actually like it with rice better! If wild rice is too expensive, buy half of a cup instead of a full cup and fill in the other half with brown rice. This recipe is also amazing with topped Israeli Feta cheese. It's in the Cheese Cave section in Wegmans right next to the Greek Feta cheese. I like it better because it has a softer texture and much more flavor than the Greek...but either will do!

When I say this takes no time to make, I'm 100% serious. Especially if you cook the rice ahead of time. Pasta is even quicker. There's a whole lot of dumping in ingredients and adding a few chopped veggies!

Mediterranean Wild Rice Bowl
Ingredients
1 cup of uncooked Wild Rice
1 15oz can of Cannellini beans, drained/rinsed/drained again
1/4 red onion, thinly sliced
2 cloves garlic, minced
2 lemons, squeezed
3 large tbsp sun-dried tomatoes (and some of the seasoned oil in the jar)
1 can of quartered artichokes, drained/rinsed/drained again
1/4 cup Mediterranean olives, quartered (I love the green ones)
1/4 of a cucumber, diced
1/2 of a tomato, chopped
2 large green onions, sliced
Parsley to top
Extra Virgin Olive Oil
Salt and pepper to taste
Directions
Bring a pot of water to a boil and add the wild rice. Let cook until done, about 20 mins. Once finished cooking, drain it and rinse with water.
While the rice is cooking, grab a large bowl and add in the rest of the ingredients.
Mix in the rice and add about 4 tbsp EVOO and pepper. Top with parsley or dill (and cheese if you choose!).
Enjoy...so easy!
