Nourishing Mushroom Soup

I created this soup last May after spending the day at a Health Fair under a tent while it was raining and FREEZING cold...for hours. I couldn't feel my fingers and raced home to warm up. I was also starving, so when I realized I didn't have anything ready to go I quickly created this mushroom soup. It was perfect...and I make it every time I'm cold to the core (like today!). It's amazing as a breakfast (keep the leftovers!) as well as a lunch or dinner. I also love it because it can be made quickly on the stove or if you're headed out for the day you can put it in the crockpot and go! Flexible recipes that are fast & filling are my favorite. Try this...it's a MUST. Seriously, it fills up my soul.

Note: You can swap the bulgur for rice or small pastas, but do it in a separate pot so it doesn't soak up your broth. Also, the bulgur cooks in the soup (without soaking up all the broth) and is done in minutes...so I recommend keeping it!





Nourishing Mushroom Soup (serves 2)


Ingredients

  • 1/2 of a sweet onion, sliced

  • 1 large garlic clove, diced

  • 1 package (8oz) of sliced baby bella mushrooms

  • 1 14oz can of small white beans, drained/rinsed/drained again

  • 4 cups (or 1 box) of broth (veggie or chicken)

  • 1/4 cup of bulgur

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • Red pepper flakes to taste (optional)

  • Extra Virgin Olive Oil (EVOO)

  • Salt/pepper to taste


Directions

  1. If you are using a crockpot, put all the ingredients into the pot and turn it on low if it'll be cooking all day, or high if it's going to cook for a few hours.

  2. For the stovetop, grab a medium pot and coat the bottom with the oil. Set the temp to medium. Add the onions and garlic and give it a stir, 2 minutes.

  3. Add the mushrooms, beans, bulgur, spices, pepper and broth to the pot and stir. Let simmer on medium for about 20-25 minutes.
