Raw Zucchini Romano Salad
It's August...which means that EVERYONE with a garden is giving away zucchini! I love zucchini, but there comes a point where I just can't eat it anymore. That is, until I came across a raw zucchini salad recipe. I tweaked it to my liking and it was gobbled up by my family for dinner. Bonus - they asked for it again (even from my kids, which is rare)!!
Ingredients Salad: 2 Medium Zucchini, shaved 2 Tbsp. chopped chives 1 Large handful of basil, torn 1 Medium shallot, diced 1 Handful of Romano (or Parm) cheese, grated Sea salt & black pepper Lemon Vinaigrette: 1 Lemon, squeezed 1 Medium garlic clove, diced 1 Tsp. Dijon mustard 1/4 cup EVOO Directions
1. Cut the tops and bottom off of the zucchinis. Using a mandolin or peeler, shave the zucchinis into thin ribbons, into a medium sized bowl. 2. Add the chopped chives, torn basil and shallot to the bowl. 3. Make the lemon vinaigrette by combining all of the vinaigrette ingredients into a small bowl and whisking gently. Pour over the zucchini. 4. Top the salad with Romano cheese. Add salt and pepper to taste. 5. Give it a toss and enjoy! PS - This is best eaten right after you make it. If you let it sit, the zucchini gets soft (not so great). Try this recipe and let me know what you think!!
