Last Minute Salad & Rice Dish

This is one of my go-to's when I have no idea what I'm making for dinner (ahem, poor planning), and I want something fast and easy to make. This would also be a great end of the week dish to use up any of your leftover veggies & toppings.
Yes, that's white basmati rice in there. My kids have been asking for white Basmati rice for months so I decided to give it a try. I love it when eating Indian food, but I really love the taste of brown rice better.
Feel free to add meat or a bit of cheese to this, as well as making any veggie/topping swaps that you want. This is more of a guideline for a fast, healthy meal...make it your own!
Last Minute Salad & Rice Dish
Ingredients
White Basmati rice
Shredded romaine plus mixed greens (about 4 cups)
4 eggs, hard boiled
Cucumber
Sun dried tomatoes
Greek Olives
Bell Peppers
1 Fresno Chile pepper
1 can white beans, rinsed and drained
Peas
Directions
Grab a large pot and cook the rice to the package directions. When it's done, drain and rinse a couple of times with cold water.
While the rice is cooking, add the remainder of the ingredients to a large bowl.
After the rice has fully drained, add it to the bowl and mix it into the salad.
Top with your favorite dressing (below are a few options!)

It's an easy pleaser, quick and tasty! I love making my own dressing because there's little to no salt or sugar AND I can create the flavors to my own taste. Here are a few ideas...use a 2:1 ratio of oil to vinegar (or soy sauce). Asian Dressing
Soy Sauce (or Coconut Aminos if you're soy free)
Sesame Oil
Ginger, powdered or fresh
Mustard Dressing
EVOO
Balsamic Vinegar
Dijon or Spicy Brown Mustard
Oregano Greek Dressing
EVOO
Red Wine Vinegar
Sumac and/or Za'atar Lemon
