Tomato-Peach Salsa

This is the BEST time of year if you ask me. So many fruits and veggies are in season! So much to choose from! Our local Farmers Market asked me to do a cooking demonstration for Tomato Week (how lucky am I?!). There's SO many ways to cook with tomatoes!

So I got to work taking a recipe that I found online and changing it up a bit to what I thought I would like. I'm not going to lie - it's delicious. Like, ridiculously delicious. PLEASE give this a try! You might want to make a double batch for a get together.

Tomato-Peach Salsa
Ingredients
1 pint of cherry tomatoes, quartered
1-2 medium peaches, not completely soft, diced
1/2 lemon, squeezed
1 small clove of garlic, diced
1 wedge of red onion, diced
1 handful of basil & chives, torn
EVOO
Sea salt & black pepper
Directions
Cut up the tomatoes, onion, garlic, lemon juice and combine in a bowl. Add a pinch of salt and pepper so the tomatoes release their juices. If you are making this in advance, cover and let sit for 2+ hours.
Dice the peaches, skin on, and add to the bowl.
Add the basil and chives to the bowl and give it a good mix.
Trust me on this one, you will be glad you gave it a try. It takes minutes to make and seconds to devour. Make this and eat right away, it's better fresh then letting it sit until the next day. Use as a topping on French Baguettes or with chips of your choice!
